Editing requires a close-reading of both the original and the translation to make sure that no meaning has been lost/altered along the way. Proofreading comes after editing and focuses more closely on the translation itself. Are there any misspelled words? Have all numbers, dates, etc. been translated accurately/formatted correctly for the target audience? With my closely trained eye, after I finish proofreading your text, there should be absolutely no typos or mistakes. This step is especially useful for financial and legal documents.
